Legendary items are not crafted in Legion — you get them from content. Crafting professions give you something else: raid consumables, crafted gear up to 935 ilvl and steady gold.
What each profession does
Alchemy
Flasks such as the Flask of the Whispered Pact and the expansion's main potion — the Potion of Prolonged Power. Plus transmutes, including Primal Sargerite for 7.3 crafting.
Worth leveling for almost everyone: consumables always move on the auction house.
Blacksmithing
850 ilvl plate gear (up to 935 with Obliterum), weapon sharpening stones and stirrups that let you gather resources without getting off your mount.
Useful for tanks and plate wearers, but weaker than Alchemy as a source of gold.
Enchanting
Enchants for rings, neck and cloak — Legion has no new weapon enchants, only illusions for transmog. Disenchanting gives you Chaos Crystal.
Worth leveling if you have a lot of spare gear from raids and Mythic+.
Engineering
Goggles, gliders, gadgets, Blingtron and the robot helper Reaves. A profession "for yourself": almost everything is bound to the owner.
Take it for the convenience and the fun, not for the income.
Jewelcrafting
Legion gems and the epic gems of 7.3, 850 ilvl rings and class necklaces. It prospects ore, and Felslate is especially profitable.
One of the best options for gold: every raider needs gems.
Leatherworking
850 ilvl leather and mail pieces, bags and the barding that removes the daze when you gather resources on the Broken Isles.
The logical partner to Skinning, and especially so for druids, monks and hunters.
Tailoring
Cloth pieces, 30-slot bags and flying carpets made from Shal'dorei Silk and Lightweave Cloth.
Bags sell steadily and in volume, and the material drops on its own.
Inscription
Vantus Runes (+1500 Versatility against a specific boss for a week), Darkmoon decks, cosmetic glyphs and tomes for swapping talents.
The runes fly off the shelves before every raid reset — an excellent profession to sell from.

If the goal is gold rather than self-sufficiency: Alchemy, Inscription and Jewelcrafting. If it is convenience: Engineering, Blacksmithing and Leatherworking, for the stirrups and the barding.
In short
- Crafted items are raised to 850 with Obliterum, and 7.3 items to 935 with Primal Obliterum.
- Legendaries and top-end gear cannot be obtained through crafting.
- Before you level up, finish ranks 2 and 3 on the recipes you actually use — otherwise you will overpay in materials.
